The production of tomato juice has seen an increased demand owing to the product’s health benefits and attributes, and so has the accompanying juice technology.

Few veggies are easier to pulp than tomato or more amenable to a range of juice products and blends. Peeling or coring is unnecessary, but depending upon the end product, tomatoes receive either a cold or hot break at juicing. During the hot break, whole tomatoes are milled and immediately heated to inactivate the enzymes, while the cold break involves immediate milling followed by rapid juicing to retain more flavour.
Milled tomato mash is passed through a pulper machine to separate the skin and seeds, and reduced to a liquid with a paddle pulper finisher, which is followed by filtration to remove any remaining seeds or skin particles. At this point, the purée may have air mixed in it and needs to pass through a deaerator to preserve the colour and flavour of the fresh tomato. The purée can undergo homogenization to increase viscosity.
