In berry juice production, extraction from either fresh or frozen fruit may be accomplished through cold or hot pressing using the SRAML pneumatic press which presses the fruit mash against perforated drain channels of a cylinder in a single or multiple cycle to achieve optimum throughput and yields. If cold pressed, the extracted juice has a light colour and delicate flavour; however, if hot pressed, the enzyme-treated juice has a deep colour and stronger flavour.
