About the Company

The story of Edi Simčič is rooted in family tradition and gradual, thoughtful growth. The family cultivated 3.5 hectares of vineyards in the 1960s, 70s, and 80s, bottled its first wine in 1989, and in the 1990s Alex Simčič took over the reins and set the foundations of the house brand. Today, the winery is run as a multi-generational family story, with vineyards spread across Fojana, Kozana, and Vipolže.

Focused on quality rather than volume, Edi Simčič has built a reputation for wines with character, structure, and elegance. That philosophy also shaped the winery’s search for new winemaking solutions that would support even greater precision in the cellar.

Their Challenge

When the team at Edi Simčič began looking for a new press, they had two clear priorities. First, the machine had to fit into a facility that had already been built. Second, they wanted a solution that could improve their previous winemaking process and give them more control over how different grape batches were handled.

Because of the winery’s high standards, they were not looking for an off-the-shelf answer, but for a press that could be adapted to their way of working and support their pursuit of finesse and precision in the final wines.

SRAML accepted the challenge and developed a press tailored to the winery’s specific requirements. The result was a flexible solution designed around both the technical limitations of the existing cellar and the quality expectations of the Edi Simčič team.

What made the difference was the adaptability of the press. The winery can easily adjust programs depending on the style of processing required, whether for crushed grapes or destemmed grapes, and fine-tune production according to the character of each batch. A key advantage is the option to program the press based on weight, allowing the team to separate different fractions according to how much juice has been extracted from a specific lot.
